Super Salad with Pomegranate Vinaigrette
Recently I posted a recipe for Homemade Pomegranate Molasses and included several recipes to use it in. However, I still had more recipes out there to share but got sidetracked with Valentine’s Day.
To add another great recipe using the Pomegranate Molasses I created this powerhouse salad using a Pomegranate Vinaigrette – I think you’ll love this. Combined with heart healthy beets, radishes, sunflower seeds, carrots, tomatoes, arugula, and kale.

Indeed a super salad, Vicki. Love that pomegranate dressing as well.
Thanks Angie, I hope you’ll give it a try.
Lotta good stuff in this salad — you have some nice flavors going on. Best one, though, is the pomegranate vinaigrette, I’ll bet. Love pom molasses! Good stuff — thanks.
I agree it’s so tasty.
A beautiful and healthy salad to enjoy Vicki! xo Catherine
Thank you. I hope you’ll try it.
I have some pomegranate molasses that would love to go in this dressing. I really like that stuff.
If you try it please let me know what you think. I love the stuff.
Such a lovely combination of flavors and ingredients. Thanks so much for your kind note about my mom. xo
Thank you Liz. Again I’m so sorry about your mom. I lost my dad one month before my daughter was born – it was so painful. Hope your dad and the rest of your family is coping well. Take care.
Ooh love the beet and pomegranate molasses combination!
So do I. I hope you’ll try this.
I do remember that Pomegranate molasses and love how you’ve used it in a vinaigrette. Very clever. I could use this salad right now after all I’ve been eating the past few days. I need some fresh veggies with a tasty dressing.
I know what you mean. I go through stages like that as well. I hope you’ll give this a try, it’s very tasty.
Sounds delicious Vicki, everything I love!
Thank you Chris.
I love this salad! I am also the only person in my house who’ll eat beets, so I’d have it all to myself. 🙂 The pomegranate molasses sounds like it makes a great dressing. 🙂
I’m the only home in my family that likes beets as well. Although I’m sure if you make the pomegranate molasses you’ll find that your family loves it. There are so many ways to utilize it in recipes. It’s endless!
Oh, this sounds great! I love beet salads!
I love beets too! I often wonder why I don’t keep them on hand all the time – they’re so healthy.
Dear Vicki, This is a super salad and looks delicious! xo Catherine
Thank you Catherine.
Beautiful salad Vicki…super refreshing, I love that you used pomegranate in the dressing.
Have a great week 🙂
Thank you Juliana I hope you’ll try it. It’s very tasty!
