Halibut with Fresh Fruit Salsa

I started this post for Grilled Halibut with Fresh Fruit Salsa just after my mom passed away, June 2nd, but at the time I just didn’t have it in me to finish.  Sometimes life just gets in the way and there’s not much you can do about it.

As many of you know by now my mom was 97 years young when she passed away.  She had a great life, ALWAYS happy, and laughing.  She never met a stranger, and welcomed everyone into our home growing up.  While most of her friends have left this earth, those attending her funeral were friends of mine and my two sisters.  All of our friends felt at home in our house, and my mom was like a second mom to all of them. She was the BEST!!!

After the service we had friends and family over to pay their respects.  So many brought trays of food, far too much for us to eat by ourselves, so we shared it with all those that came to spend time with us.

Over the next few days we tried to eat what was left and come up with recipes using the fresh food, and produce.

Halibut with Fresh Fruit Salsa

We decided to make some fish two days later.  My daughter was instrumental in creating this recipe.

Since we had quite a bit of fresh fruit leftover we didn’t want to have to throw any of it away.  We knew we had to use it up quickly before it went bad, so we made smoothies as well as this Halibut with Fresh Fruit Salsa.  It was so good!

We also used some of the fresh produce, and made a side Farro Salad.

Farro Salad with Corn, Tomatoes, Feta, Arugula, and Pine Nuts

Everything was delicious!  My daughter prepared everything and I cooked the Halibut out on the grill.

When I started this post just after my mom passed away I put it down, and I am finally just getting back to it.  I knew it would be challenging without my mom, but it’s even more so than I had imagined.

The out pouring of affection for her has been overwhelming.  Yet I sit back each night and think to myself, it’s a true testament to kindness.  People never forget, and gravitate towards it.  When it’s gone, there’s a part of you that’s missing.  Not just from me and my sisters, but from the lives she clearly touched.

Halibut with Fresh Fruit Salsa

Grilled Halibut with Fresh Fruit Salsa and Farro Salad

This meaty fish is a refreshing way to end your day - Grilled Halibut with Fresh Fruit Salsa and a hearty Farro Salad.  So light and delicious - you won't want to miss it!

Ingredients:

  • 4 (8 oz.) pieces halibut, skin on
  • Trader Joe's Chili Lime Seasoning
  • Fresh pineapple, cubed
  • 1 avocado, cubed
  • 1 Tbsp. cilantro, chopped
  • Red & yellow, & orange bell peppers, cubed
  • 1 fresh lime, juiced
  • salt & pepper to taste
Farro Salad
  • 2 Corn on the Cob, grilled
  • 5 oz. baby tomatoes, halved
  • 2.5 oz. Arugula
  • 1/2 cup pine nuts, toasted
  • 4 oz. feta cheese
  • 1/2 cup dry farro, cooked according to package
  • lemon half
  • olive oil
  • salt & pepper
 

Directions:

  1. Fish: Heat grill to medium.  Sprinkle Chili Lime seasoning onto fish depending on your taste.
  2. Place fish on grill for approximately 15-20 minutes skin side down. See notes!
  3. Once down remove from grill using a fish spatula. Place spatula between meat of fish and top of skin.  Gently glide spatula through until fish is released from skin. Set on plates.
  4. Salsa: Combine pineapple, avocado, cilantro, peppers, lime juice, salt and pepper.
  5. Farro Salad: Cook farro according to package directions then cool to room temperature.   Grill corn then remove kernels from cob. Toast pine nuts. In a large bowl add farro, corn, pine nuts, feta, tomatoes, and arugula.  Squeeze half a lemon, and drizzle olive oil over salad.  Season with salt & pepper and toss to combine.
  6. Serve: Place Halibut onto individual plates and spoon salsa over the top. Serve Farro Salad on the side.

Notes:
  • Fish:I typically only grill with the skin side down.  If looking for nice grill marks be sure to rub oil on flesh of fish then top with seasoning.  Place meat side down for first 10 minutes then carefully flip fish skin side down for remaining 5-10 minutes until down.  Remove fish as stated above.
  • Trader Joe's Seasoning: Everyone's palate is different, so be sure to read label for TJ Seasoning and sprinkle liberally or sparingly depending on your liking.
