I started this post for Grilled Halibut with Fresh Fruit Salsa just after my mom passed away, June 2nd, but at the time I just didn’t have it in me to finish. Sometimes life just gets in the way and there’s not much you can do about it.
As many of you know by now my mom was 97 years young when she passed away. She had a great life, ALWAYS happy, and laughing. She never met a stranger, and welcomed everyone into our home growing up. While most of her friends have left this earth, those attending her funeral were friends of mine and my two sisters. All of our friends felt at home in our house, and my mom was like a second mom to all of them. She was the BEST!!!
After the service we had friends and family over to pay their respects. So many brought trays of food, far too much for us to eat by ourselves, so we shared it with all those that came to spend time with us.
Over the next few days we tried to eat what was left and come up with recipes using the fresh food, and produce.
We decided to make some fish two days later. My daughter was instrumental in creating this recipe.
Since we had quite a bit of fresh fruit leftover we didn’t want to have to throw any of it away. We knew we had to use it up quickly before it went bad, so we made smoothies as well as this Halibut with Fresh Fruit Salsa. It was so good!
We also used some of the fresh produce, and made a side Farro Salad.
Everything was delicious! My daughter prepared everything and I cooked the Halibut out on the grill.
When I started this post just after my mom passed away I put it down, and I am finally just getting back to it. I knew it would be challenging without my mom, but it’s even more so than I had imagined.
The out pouring of affection for her has been overwhelming. Yet I sit back each night and think to myself, it’s a true testament to kindness. People never forget, and gravitate towards it. When it’s gone, there’s a part of you that’s missing. Not just from me and my sisters, but from the lives she clearly touched.
