Sprouted Whole Wheat Bread with Sunflower Seeds and Beer

I hope everyone is doing well.  I’ve taken a little time off to sit back and regroup with all that’s been going on in the world. Trying to find some balance in life, and adjust to what might be the new normal for a time.

I know the world is in a state of chaos and panic with Covid-19 and the state of the economy. However, I personally feel like this is the ideal time to focus on what truly matters in life.  For me it’s family – I love them all!  I don’t know what I’d do without my husband, kids, and dog.  We’ve all had our ups and downs but I know we are always here for one another, each others sounding board, through sickness and good health, good days and bad, laughter and tears. My sisters, have held me up when I’ve been ready to crumble. The 3 of us together became a of tower of strength to endure what life threw our way over the past couple of years.  I don’t know what we would have done without each other.

My pup Cody has been a constant companion, always by my side ready for anything.  I was there for him when he lost his brother, and he’s been here for me through many of life’s challenges that have come my way over the past few years. Yet another hurdle my family will be facing soon is his departure. We recently found out Cody was sick, and his time is coming in the near future.  It will be heart wrenching and difficult, but we will get through that as well.   

While all this may sound sad, we have to remember that life does go on, and we learn from everything that we are faced to deal with. We don’t realize how strong we are until we are faced with adversity – in a sense it hardens us.

As I sit outside on my back patio this morning, the sun shining so bright without a cloud in the sky.  I hear the sound of the birds chirping so loudly like never before.  I’m certain it’s because even though I live in the suburbs where it’s basically quiet, the typical sound of cars in the distance is gone.  People are staying home, shielding themselves from the outside world.

Little by little everyone is waking up and coming outside to enjoy this glorious day.  The neighbors behind me have come out with their triplets.  I can hear the laughter and joyful screams as they slide down their slide and run about their yard.  

Suddenly on my right I hear someones music turn on with an angelic voice singing, while I just caught a glimpse of my neighbor on my left, hosing off his driveway.

For the first time in ages I feel like this is our opportunity to live the simple life again – like when I was a child.  Enjoy those around you (while still being safe).  Take the time to listen to your spouse, children, family and friends without judgement.  Spend time together talking, laughing, playing games, and being outdoors together. Don’t take anyone or thing for granted.  Life is precious! Forgive and forget!

Maybe, just maybe this is a test from the man up in heaven, telling us to get our priorities straight before it’s all taken from us.

My daughter is home since the company she works for has everyone working remotely.  She says we’ve never made homemade bread before, and although I have, I suppose I’ve never done it with her.  So in the weeks ahead we are going to tackle some bread making.  Yesterday though, we decided to make something simple..Sprouted Whole Wheat Bread with Sunflower Seeds and Beer. 

I think you’re going to love this quick and hearty loaf.  It takes all of 5 minutes to prep, and uses no yeast other than that which is in the beer.  There’s no need to knead the bread as the baking powder and the yeast in the beer will leaven it.

Hearty Sprouted Whole Wheat Bread with Sunflower Seeds & Honey

Sprouted Whole Wheat Bread with Sunflower Seeds & Beer

This Sprouted Whole Wheat Bread with Sunflower Seeds & Beer comes together in less than an hour and requires no kneading. It's so tasty, you'll likely finish the loaf off in one sitting.

Ingredients:

  • 2 Tbsp. coconut oil or butter, melted (I used unsalted butter)
  • 2 3/4 cups sprouted whole wheat flour (or whatever you prefer: AP flour, light spelt, etc.)
  • 1 Tbsp. baking powder
  • 1 1/2 tsp. salt (kosher)
  • 1/4 cup coconut sugar, honey (I used), or agave syrup
  • 1/3 cup sunflower seeds (or other seeds: flaxseeds, pumpkin seeds, a combo, and so on)
  • 1 can (10 oz.) beer (any variety for different flavors)

Directions:

  1. Preheat oven to 350F degrees. Grease a 1-to-1 1/2 qt. loaf pan with 1 tablespoon of coconut oil or non-stick spray.
  2. Combine the flour, baking powder, salt, and sweetner (I used honey) in a bowl. Mix in almost all the sunflower seeds, keep a few for garnishing.  Pour in beer and mix until it comes together, no kneading necessary. Pour batter into prepared pan.
  3. Pour the rest of the coconut oil (I used butter) over the batter.
  4. Bake uncovered for 45 minutes, or until a bamboo skewer inserted into the center comes out clean.
