Slow Cooked BBQ Chuck Roast

For those of you that follow me on Facebook you may have seen that since we put our one pup down in October our other dog has come down with a rash of issues, all of which I believe stem from the fact he lost his best friend and brother. 

I worry about my pets just like I do with the rest of my family members.  After all they’re family but can’t communicate with words, so it’s our job as their parents to figure out what ails them.

About 2 weeks ago our almost 9 year old lab started vomiting and couldn’t keep anything down.  We rushed him to the ER and $2000 later they determined it was Inflammatory Bowel Disease.  I questioned that because he hasn’t been himself since his brother died but am open to listening.

Not long after his brother died he was also diagnosed with an enlarged prostate discovered from a routine urinalysis that needed further investigation.  The remedy was to get him neutered, something the men in my family were against when the dogs were younger.  So yesterday in spite of his vomiting episode 2 weeks ago we had him neutered.

I was an emotional mess having just lost our other dog and worried sick that this one was getting sick every time we turned around. I prayed nothing would happen to him during surgery.  I was calm for my pup, but my stomach was in knots with worry.

What does all this have to do with my Slow Cooked BBQ Chuck Roast?  Knowing that I would be running my dog to the vet early Monday morning then back to get him at 3:00pm just when all the school traffic starts, I knew I had to prepare something I could toss in the oven and forget about.

The Slow Cooked BBQ Chuck Roast is one of those meals that I learned to cook when my husband and I were newlyweds.  While I’m not a fan of packaged ingredients, sometimes it’s the perfect solution to a crazy hectic day.   The best part about this recipe though, is it’s positively delicious! Not only is the meat like butter, but it’s full of flavor!

Try this quick, easy, 3 ingredient meal when life has you running in a million directions.  Those you serve will think you’ve been a slave to the kitchen all day!

Slow Cooked BBQ Chuck Roast

This 3 ingredient meal has all the flavor and appeal of a meal that you've slaved over all day but simply put into the oven and forgot about!

Ingredients:

Directions:

  1. Spray a roasting pan with non-stick spray.
  2. Rinse and pat dry Beef Chuck Roast and set in pan.
  3. Cover with BBQ Sauce, then sprinkle package of Knorr Onion Soup Mix over the top.
  4. Cover with foil, shiny side in, and place in preheated 300F degree oven for 4 hours  or up to 5 hours, depending on how your oven temperature runs.
  5. Serve.

  1. Love this easy BBQ chuck roast! Bill would be thrilled to come home to this for dinner. As a newlywed, I made a beef stew with Lipton’s soup mix and (I think) a can of cream of mushroom soup. Bill loved that!
    P.S. Lambeau had an endoscopy and biopsy to diagnose her IBD. Hope your pup will feel better soon. xo

    • Those onion soup mixes were definitely a hit in the 70s and they definitely still make dishes taste great. I try not to use them because of all the not great ingredients but sometimes when life gets busy you just have to cave. This meal is so good!

      My pup is on the mend – yay!

    • Labs are great dogs but have to say any pet one owns is great – they make the best companions and are always loving!

  5. I’m so sorry to read about your baby boy. Like you, my animals are my babies and when they get sick, I’m miserable. Comfort food such as this awesome looking pot roast is a great solution for calming the nerves. Sure hope it worked for you and that you don’t need to make another any time soon although…why not. It looks SO GOOD!
