Watermelon Cooler with Watermelon, Pineapple, Lime, Beets, & Mint

You’d think that being in quarantine would give you the opportunity to get through all the groceries purchased. Think again!

So when I had a large watermelon, whole pineapple, raw beets, limes and mint that needed to be used I decided to run them through my Kuvings juicer. I came up with this amazing Pure & Fresh Watermelon Cooler.

This beverage was so refreshing and flavorful we’ve been drinking it for breakfast, with lunch, after a workout, and with dinner. Come to think of it, this would also taste great with some prosecco added to it for a spritzer. It’s so tasty, you really need to try this!

If you don’t have a juicer you can always blend the ingredients separately and strain them, however, it will definitely take time that way.

I love juicing! If you’re a fan as well of fresh juice but don’t have a juicer, I recommend the Kuvings brand.

I did a lot of research before purchasing a juicer. Just know that clean-up does take some time. It doesn’t bother me, but it’s not for everyone.

The Kuvings Juicer  (I’m not getting paid or compensated in any way) is easy to assemble and take apart. It’s always best in my opinion to rinse off all the parts before indulging in your beverage. This way the pulp doesn’t dry up on the components, making it more challenging to clean. Then go back and wash well or do it all before drinking your creation.

Nothing is worse than having to scrub when you could have easily given it a quick rinse before indulging.

This recipe is so simple. When you’re done it will make quite a bit (about a half gallon, depending on the size of your watermelon and pineapple. So if you feel the need, go ahead and use some of the ingredients to make Popsicle’s. Even your kids will love these, minus the alcohol if you’ve added it!

Pure & Fresh Watermelon Cooler

This Pure & Fresh Watermelon Cooler will refreshen you even after the most challenging workout, while providing you with plenty of nutritional benefits!


  • 1 large seedless watermelon, skin removed, cut into slices
  • 1 large pineapple, skin removed, sliced to fit juicing tube
  • 1 raw beet, peeled and sliced
  • 1 lime, peeled
  • bunch of fresh mint, to taste


  1. Place ingredients in the order listed and puree
  2. One pureed, place in pitcher or beverage container with a spout.
  3. Chill and serve. Garnish with lime, watermelon or pineapple wedges and a sprig of fresh mint.

  2. We’ve been getting a small watermelon every week. The last 2 or 3 have been wonderful — really good flavor. We’re starting to get tired of plain, cut-up watermelon, so this would be a nice change. Thanks!

    • I like those little watermelons. They’re perfect and can be eaten before they go bad. Now if you have any leftovers you can try this recipe. It’s so refreshing!
