No Carb Zucchini Pasta!

Zucchini Pasta

Do you have a love, hate relationship with pasta?  Many of us do.   I love to eat it, but hate how it makes me feel, and what it does to my waistline.

What if I told you that you could eat as much of it as you like without feeling sick, bloated and stuffed.  Would you be interested?  Well let me show you how…..

Have you ever heard of a Spiralizer? If not, you really need to get one.  They’re wonderful, easy to use, and it makes raw vegetables taste exactly like pasta, but it’s healthy!  I know what you’re thinking, or wondering what your husband and kids might think.  Trust me, zucchini pasta is incredibly delicious and satisfying.

I’ve prepared this in my culinary classes where my students hesitate to try it, then can’t get enough of it.  Last week I made a batch, my kids were home, both in their twenties, and once they tried it, they wanted more.  In fact, my son was going back to his place, and asked if he could take some with him.  We had finished what I’d made, but I still had another zucchini in the refrigerator, so I quickly prepared a batch for him to take home.  It was as easy as that.  With simple toppings of fresh tomatoes, a salsa, pesto, or whatever you desire, even meatballs (chicken or turkey would be best) and pasta sauce – this is one dish even your guests will enjoy.  Watch this video, and I’ll show you how to make it.

So what do you think?  That’s what I thought.  I highly recommend trying a Spiralizer, but if purchasing one isn’t in the cards for you, then you could use a vegetable peeler or grater, using the medium size holes – it won’t look like spaghetti, but it will still taste great.

  1. Just got myself one kilo of zucchini and I even have a bottle of red pesto in the fridge! This is definitely a great no carb pasta for the dinner, Vicki.

  2. A great idea Vicki even if I do not have room in my small kitchen for the spiralizer. I do do somq quite interesting things with a vegetable peeler 🙂 ! I love wholemeal pasta of the spelt variety for instance + many of the Eastern wholemeal ones and would never go without a certain amount of healthy carbs [already for the calmness and composure this generates], but I do love this vegetable variation for a salad. And it was so lovely to ‘meet’ you in person!!!

    • I’ve never tried spelt pasta in fact I don’t believe I’ve ever seen it. Do you make it or purchase it? I’m glad you liked my video. Maybe someday you’ll start a blog and I can visit it. Thank you for your comments.

    • Spelt pasta is becoming quite popular inn Australia and one can usually get it in the dry form even at most supermarkets, certainly at all health food stores. Sadly I have been too busy to make my own pasta, tho’ ‘everybody’ seems to be using spelt flour – the rather popular spelt bread also is very much regarded as a ‘health’ bread as it is almost 1/3 protein. I would so love to begin my own blog, but living in the country, working and studying fulltime ++++ the time required at the moment simply precludes it! Very few niches left also 🙂 !

  4. Sounds like a fun gadget! I’ve used a vegetable peeler before to make “fettuccine” from zucchini, and you’re right it works well as a pasta substitute, particularly when paired with a hearty and flavorful sauce. Thanks for the heads up on this.

    • The spiralizer is more fun to use and definitely mimics that of pasta but a grater will work too. I love making it this way. It’s satisfying, healthy and great for the waistline.

  6. I quickly wanted to read this post in the morning but when I saw the video, then I thought,OK I will come back and watch later in the evening. Vicki this is a great kitchen equipment.. If I show this to my husband he will be ready to buy, but then he will be expecting a new pasta dish every other day 🙂 Jokes apart, the pasta salad with pesto indeed looked delicious!

    • Your so funny. You could easily have a different pasta every night with as simple the Spiralizer is. It also has other attachments making it useful for other cuts and sizes. You can view those in the link I provided.

      It’s certainly healthier than eating pasta and best of all gluten free. If you lived close by I’d let you try mine. Although not as fun or pretty you could use a shredder and have smaller cuts rather than long spaghetti-like noodles.

    We don’t get zucchini that much here but we get Luffa (Ridge gourd) so I wonder if it would work with this veggie too. Vicki your new page rocks! =D
