How to Make an Ice Cream Mud Pie – Video!

It’s that time of year again when  the weather is hot and humid, depending on what part of the county or world you live in.  My family loves ice cream, although for the most part we’ll have frozen yogurt or fat free frozen yogurt.  However, this weekend I decided to fatten it up just a bit and make a wonderful Ice Cream Mud Pie for my husband. 

Since we’re vacationing in the mountains we all love to bike, although he goes to the extreme.   He’s already participated in the Bike Tour of Coloroado a 500 + mile event over 7 days, then the Double Triple Bypass a two day event biking over 3 mountain passes biking from Evergreen to Avon and back the next day.  This past weekend he biked Pikes Peak a one day event. Since I knew he’d come back tired and hungry, I decided to make all his favorite grub food including this wonderful Ice Cream Mud Pie that’s sure to satisfy. With an Oreo crust layer, coffee ice cream blended with Heath Bars, then topped with a thick, rich and delicious fudge sauce – who could resist?  YUM was it good!

Of course, if you make this yourself, use whatever ice cream and mix in’s you prefer and know your family and friends will love.

I recommend making this at least one day ahead so your ice cream has a chance to freeze up nicely.  In the video below, I sliced this after about 3 hours.  It was firm (not solid) but it’s best to let it set in the freezer for 24 hours – to get perfect slices.  You can see from my photo above, the ice cream pie was nice and firm.  This photo was taken a day later.

If you don’t have a springform pan then you can certainly use a pie plate, a 9×13 pan, or plastic container with a lid.

Ice cream Mud Pie

Ingredients:

For Crust:

  • 1/4 cup (1/2 stick unsalted butter), melted
  • 20 Oreo cookies processed in a food processor

For Filling:

  • 1/2 gallon coffee ice cream
  • 4 oz. Heath Bar Toffee Bits

For Sauce:

  • 1/4 cup (1/2 stick butter)
  • 1 (6 oz.) package semi-sweet chocolate cips
  • 1 (5 oz.) can evaporated milk
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • Caramel Toping (jarred or homemade), optional

Directions:

Crust: Mix Melted butter and Oreo's together; pat into a 9" springform pan, 9x13-inch pan or round pie pan.  Place in freezer until cold.

To prepare the filling: Soften the ice cream.  I do this by placing it into a large bowl and stirring.  It softens quicker.  Mix in Heath Bar pieces.  Spread softened ice cream mixture over cold crust.  Return to freezer.

To Prepare sauce: Melt butter and chocolate chips in saucepan over low heat.  Stir in evaporated milk and powdered sugar.  Cook stirring constantly with wire whisk or wooden spoon, until mixture thickens.  Remove from heat; stir in vanilla. Set aside to cool until room temperature.  When ice cream in container has hardened, pour cooled sauce over top and spread to cover edge to edge.  Cover and return to freezer and chill.

Serve: Cut into wedges if using a springform pan or pie pan.  Cut into squares if using a rectangular pan.  Drizzle with Caramel Sauce and Serve.

    • Somehow my rely got posted in the wrong place. Here it was: I am a visual learner too. Show me and I can duplicate it. If I could do videos more often I would, I think they make a huge difference. I hope you try this, it’s very easy. It just takes time.

  6. Gosh, the altitude at Pike’s Peak would probably get to me – biking up that is impressive. As is this ice cream mud pie – it looks so terrific! And I’ll bet tasted even better. Good stuff – thanks.

    • He’s been out here a while so he is acclimated to the altitude. However, it’s no easy feat. The mud pie turned out perfect and is so simple to prepare – you should try it.

  7. Oh, my, I can’t imagine baking over passes in Colorado…I can’t even run when we’re in Aspen…after a block, I’m dead meat! So your hubby definitely deserves a full fat dessert. My family loves mud pie…I’m off to watch your video 🙂

    • I think running at altitude is much harder than biking. I can ride 4 hours at a time and although I come back very tired, had I run I’d be dead after 4 hours. Next time try biking instead of running. Plus it’s easier on the joints.

  11. After an intense workout like that, he needs this kind of dessert to get some energy back! We were at Pike’s Peak last summer and I can’t imagine biking it. Ice cream pies are such a fun dessert in the summer.

    • He trains all year for these events so he’s ready for it but he still gets exhausted. I’d love to do it but I just don’t have the same competitive nature that he has. I bike for hours but for enjoyment, not for the kill.

    • Yes he deserves those fattening treats, after all the calories he’s burned. As for the parchment, I find it much easier to release the ice cream from the pan. Then once removed you can put the springform sides back on and there’s no problem releasing.

  13. We were in Edwards and Vail for a wedding last the 3rd week of last August and there was a bike race going through the area with roads blocked just for the racers. I wonder if your husband was in that one! He must be very fit to bike in those races.

    What a delicious treat and reward for a day of exercise. Mine might be walking on the treadmill and working in the garden 🙂

    • We were not still in Colorado by the 3rd week of August last year. I know the Leadville 100 was at that time but I don’t think they close the streets off in Edwards for that.

      My husband was a happy camper when he came home to this nice treat along with the other grub food I prepared.

  19. Hi Vicki! I have moved to Fort Lauderdale and really miss running into you at Schnucks!!! I love your mud pie video!! I have made something similar for about 20 years called an Oreo Ice Cream Dessert. I make it in a 9×13 and it definitely is not as attractive as yours!! Also, your topping sounds richer and better than mine!! It will be my 4th of July dessert!!!
    I do have two questions…I was not able to get the written recipe and I was wondering what size springform you used and what was the amount of ice cream ?
    It sounds like you are having fun in Colorado. Do you still live in St Louis??
    We moved to FL to be with our 2 granddaughters. I miss my friends and job in St Louis but I love the weather and really love being with my family. My daughter and son and their families are all here! I just need to get my youngest here!!!
