Grilled Peach Caprese Salad

It’s been quite sometime since my last post.  I’ve needed time to regroup and get my wits about me.

My mom passed away on June 2nd.  She lived a long, wonderful life, dying at age 97 – and was vibrant up until the end. In fact, her passing was so unexpected. Even though she was 97 it’s been very challenging for me and my sisters to deal with.

I haven’t felt much like cooking and have spent most of my time with my sisters figuring things out.  My mom was the icing on the cake having dealt with numerous deaths, and sickness of family and friends over the past year.  Life can be very challenging, and just when you think you can’t deal with another thing, something else happens.  You truly realize how strong you are, even though you feel as though you’re crumbling inside.

I attempted to post several other recipes just after my moms passing, but just couldn’t complete the post.  Those posts are half written, and I plan to share them soon.

Grilled Peaches with mozzarella balls, tomatoes , basil, and balsamic reduction

I was in need of a serious retreat so headed up to the mountains to try and find my happy place.

Before leaving town I made this Grilled Peach Caprese Salad with ingredients I had on hand.  We all enjoyed it, and it was so refreshing. I think you’ll like it as well.

Grilled Peach Caprese Salad

This Grilled Peach Caprese Salad is a refreshing twist on the classic Caprese Salad making it ideal for summer!

Ingredients:

  • 3 peaches, halved, grilled, then quartered
  • 10.5 oz. container baby tomatoes, halved
  • 1 8 oz.container Bel Gioioso ciliegine mozzarella balls, halved
  • 1 bunch fresh basil
  • Balsamic reduction, drizzled

Directions:

  1. On an indoor (greased) or outdoor grill over medium heat, grill peach halves. Grill briefly until they have grill marks and slightly softened. Set aside to cool.
  2. Halve tomatoes, and ciliegine mozzarella balls.
  3. Once peaches have cooled slice each half into quarters.
  4. On a nice platter, scatter peaches, mozzarella balls, and tomatoes.  Top with fresh basil leaves.
  5. Drizzle generously with a balsamic reduction (homemade or store bought).

  1. Vicki, I’m sorry to hear about your mom. Sad news. Although I’m glad you posted this terrific looking salad — and I have peaches on hand, so I can make this! — do take as much time as you need before you start blogging again on a regular basis. Take care.

    • Thank you John. I honestly just haven’t had it in me to post. I guess we all need time to grieve and recover.

    Glad you found some solace in the mountains and love this yummy twist on a caprese salad! I’ve gotten some terrific Georgia peaches lately and will definitely try this!

    • Thanks Liz, I know you’ve gone through this already too! It is painful whether it’s quick or drawn out. It’s never easy losing a loved one.

  5. I’m so sorry for your loss. 🙁 But WOW, what a long and wonderful life she had and all those years you both had to enjoy each other. It’s amazing that she still had her wits about her even at 97. My thoughts are with you and your sisters.

    I love your version of a caprese. I’ve grilled peaches for ice cream and balsamic but never for a salad. That a great idea and what a veautiful salad it makes.

    • Thank you MJ. Yes I attribute that to the fact she read the paper daily cover to cover and did the crossword puzzles. It kept her sharp as a tact. Something we all should do regularly.

  6. Oh my, I’m so sorry. I just got back from visiting, or rather, checking on my mother. she lives alone, won’t move, mostly blind, can’t drive…. and dementia. She’s 91. It’s so challenging. Like you, when it happens, it will be a surprise. She’s very healthy otherwise. And was always so independent, which is why she’s so miserable now… It’s such a tough time. Glad you had an escape. We’re going to NYC on Thursday, which isn’t my idea of an escape, but we’ll be visiting our daughter, so really looking forward to that. I absolutely love the ingredients in your salad. Can’t wait to make it!

    • Thanks Mimi. It is so challenging when they get up in age. Believe it or not she decided at 95 to finally stop driving. THen regretted it but knew it was best since she could tell her reflexes weren’t as quick. I don’t think it’s ever easy – my dad was sick for years and it was still devastating and here my mom was 97. You would think we would have expected it. Even though we talked about it we still felt like she’s live on forever. Unfortunately none of us get out of here alive.
