Grilled Chicken Roulade with Pesto Potato Salad

Have you ever been together with a group of friends to cook or participated in a hands-on cooking class?  If so, you know how much fun it can be.  Since I’ve been vacationing in the mountains I’ve had a bit more time to relax, bike, hike, enjoy cooking, and watch some of my favorite shows.

Wow! I had no idea what I’d been missing.  I had the TV on a couple weeks ago flipping through the channels and there he was – Michael Symon, with his adorable smile and cute little bald head.  He’s so darling!   You know what I’m talking about if you know him.   My fingers stopped in their tracks.  He was on a show I’d seen only once quite sometime ago, but I guess because of my schedule, never heard a thing about it again.

The show is called The Chew.  It airs Monday – Friday on ABC – 1:00pm Eastern time and Noon Pacific and Central time.  While watching the episode I felt like I was right there on the set with Michael and his other co-hosts:
Carla Hall
Clinton Kelly
Daphne Oz
Mario Batali

The 5 of them work so well together each having their own unique qualities, and offering creative recipes, teaching you tips and tricks, all while laughing and having fun.  I had the best time. I was so excited, I got online to see what other episodes had aired that I had missed. I was glued to my PC for hours.

After watching this particular episode it inspired me to create my own summer dish that you can view below.

Pesto Potato Salad with Tomatoes and Haricots Verts

This recipe was inspired by watching an episode of The Chew on ABC. Although I made a Grilled Chicken Roulade laced with Pesto to go with my Pesto Potato Salad, I will be sharing that recipe in my next post. So be sure to come back.

Ingredients:

20 mini Yukon Gold potatoes, quartered

10-1/2 ounce container Grape Tomatoes

6 ounces HaricotsVerts

Basil Pesto

Directions:

  1. Place quartered potatoes in a large pasta pot.  Add about an inch of water in the bottom of the pot.  Turn up the heat and cover.
  2. Steam potatoes until slightly tender, and can be inserted with the tip of a knife easily.
  3. Keeping boiling water in pot, remove potatoes, rinse in cool water to stop the cooking process and place in a large bowl.
  4. Replace strainer back into pot and add Haricots Verts.  Place lid on pot and steam for about 2 minutes or until bright green.
  5. Remove strainer from pot and rinse Haricots Verts with cool water.  Drain, then add to potatoes.
  6. Add Basil Pesto to desired amount and allow to cool slightly before adding tomatoes. Stir to combine.
  7. This dish can be served warm or chilled.

    • This salad is wonderful and pairs well with my Chicken Roulade that’s laced with a basil pesto. I will share that recipe later.

      As for The Chew you have to watch it. It’s my new favorite show. All the co-hosts work so well together and compliment each other so well. Plus they share great recipes, have fantastic guests but most of all it’s fun to watch. Check it out, I think you’ll like it.

  2. Protein, Carbs, and Vitamin…this dish has all the important nutrients and looks very delicious!

    • It is delicious and with some additional pesto drizzled over the chicken it brings it all together. I didn’t show the drizzle because then you wouldn’t be able to see the swirl of the pesto in the chicken. I hope you’ll try it and don’t forget to check out The Chew if you’ve never seen it before.   6. Yum chicken roulade! Oh I miss this and why didn’t I make this for so long. Need to try your pesto version.
    Unfortunately I can’t watch the video, seem as if they didn’t allow india to see it. Anyway, the show sounds familiar but not sure if it is the same that we get here.

  7. Your dish reminded me to make chicken roulade this summer. I love to stuff dry cranberries in it and then eat it with any salad. The potato salad with pesto looks great.

  11. I don’t know why but it says “this video isn’t available” when I tried to watch it… I use pesto for pasta and sandwich but haven’t used for potatoes (and I’m a big fan!) yet. I can’t wait to try that! 🙂
