Easter Peeps Cupcake

If you’re looking for a quick last minute treat to serve on Easter try these Easter Peeps Cupcakes. They are so easy and will take just minutes to whip up. 

Make them with Easter Peep Chicks, Easter Peep Bunnies or both.

Easter Peeps Cupcake

No need to whip up fresh buttercream icing, unless you have the time.  Use a box cake mix or whip up a batch from scratch.  Either way you’ve got a super fun treat that kids and adults will love.

Here’s the simple way to make them…….

Easter Peeps Cupcakes

Ingredients:

  • 1 can white buttercream icing
  • leaf green gel color
  • pastry bag or Zip-lock Baggie
  • Ateco pastry tip #234
  • 12 cupcakes
  • cupcake liners
  • Easter Peep Chicks or Bunnies
  • Candy Easter Eggs (optional)
  • toothpicks

Directions:

  1. Line a 12 cup cupcake pan with cupcake liners.
  2. Prepare cake batter and pour into cupcake liners. Bake according to package directions.  Set aside to cool.
  3. Drop leaf green gel color into buttercream icing and mix until thoroughly blended.  Start with about 3 drops and add more if needed to achieve the desired color.
  4. Place pastry tip into pastry bag with or without coupler.  Add colored icing to bag.  Push icing down to reach pastry tip and twist top of bag to seal tight.
  5. Starting at the outer edge of the cupcake, squeeze a small amount of icing onto cupcake.  Squeeze...Stop....Pull upward to release, or to a side for tall grass.  Depending on how long you squeeze the icing will depend on how tall or high your grass will look.
  6. Continue in a concentric circle moving from the outside towards the center.  If any spaces are left uncovered simply fill in the spaces.  This is very forgiving.
  7. Place a toothpick starting on the underneath side of one Easter Peep and push up towards the center of the Peep leaving about 1-inch exposed.  Stick Easter Peep into the cupcake wherever you desire.  If using the Chick add some candy eggs around it.  If using Bunny, just leave plain or decorate with whatever suits you.
  8. Serve.
