BBQ Glazed Salmon over Roasted Asparagus & Yukon Gold Potatoes

I love creating fancy dishes and don’t mind that they require hours of prep, especially when I’m entertaining.  But let’s face it, most of us don’t have the time or desire for elaborate meals.  During the week I have a rotation of dishes that I cook for my family just like anyone else.  One of our favorites is my BBQ Glazed Salmon I created years ago, that literally takes 15 minutes from start to finish. 

I know there are large number of people who don’t like fish but we love it.  It’s healthy for you, light, and doesn’t leave you feeling miserable after eating it.  I create numerous recipes using salmon that my family always loves. My BBQ Glazed Salmon is #1 in our book, but best of all – can be made with your eyes closed.

My daughter even makes this BBQ Glazed Salmon at her place on a weekly basis.  If I make more than I have joining us for dinner, it’s always devoured the next day by someone.

I typically serve it with roasted potatoes and a veggie or this quinoa and a salad.  The meal is effortless, and so flavorful.

Now that summer is here, so many of us are running our kids everywhere, with little time for rest after a long day of work.  So I thought I’d share my super simple BBQ Glazed Salmon to help take the stress off your day!

Remember this isn’t fancy, but I’ve never found anyone that didn’t love it – unless of course they dislike salmon or fish altogether.

BBQ Glazed Salmon over Roasted Asparagus & Yukon Gold Potatoes

BBQ Glazed Salmon

Restaurant quality salmon in 10 minutes.

Ingredients:

  • 4 (6-8 ounce) pieces of salmon, skin on
  • 2 tablespoons BBQ Sauce (I use Sweet Baby Ray's)
  • 2 tablespoons Apricot Preserves

Directions:

  1. Rinse and pat salmon dry with a paper towel.
  2. Line a sheet pan with heavy duty foil or heat up the grill and leave on medium heat.
  3. Combine BBQ sauce and apricot preserves.  Basically it's equal portions of both ingredients.  If you prefer a thick glaze increase the amounts used, equally.
  4. Spread glaze over tops of salmon. If roasting, place in the oven for 8-10 minutes.  If grilling, grill over medium heat for 8-10 minutes, lid closed.
  5. Remove from pan or grate with a fish spatula or thin spatula. Place spatula between the top of the skin and salmon then slide spatula from front to back.  The skin will release effortlessly.
  6. Plate and serve with sides of choice.

    • It is delicious Angie but it’s the combination of the BBQ sauce and Apricot Preserves that makes it taste so good. Although just plain BBQ sauce I’m sure is tasty too!
